I wanted another festive-themed bento, but several timing- and cooking-related disasters later it's just a random veggie bento. Oh well, as long as it's pretty and tasty...!

Small box (background): couscous, carrot shaves and halloumi on lettuce, cherry tomatoes.
Big box(foreground): More halloumi, Ajvar, cherry tomatoes, fried zucchini chips, baked potato wedges, and a piece of Knäck.

This may or may not be the last post this year. We'll see how I feel tonight!

Decided to treat myself to something this Christmas...something NON kitchen related for a change.  Well it is purchased to keep me company in the kitchen.  I have been using my iphone built in speakers when i am mucking around in the kitchen, and well lets just say the sound isn't that hot. 

I have wanted one of these for over 2 years....and well i decided to stop being lazy....made a trip down to funan and got these little babies.  Sigh...now that I know that I can connect more than a pair at one go...i am so tempted to get more!! I like my new toy....

This may well be the last bento of the year (unless I decide to make some for myself during the christmas days where I'm working *sigh*) so.. a Christmas Tree was in order, I thought...

Funny enough this is probably the fastest bento I've ever made, I think it took 15 minutes max - but then again I already had the meat, leftover from dinner, and it's not exactly elaborate, so...

Pork pot roast with mandarin wedges. Pasta with ketchup, covered with sugar snaps, corn, carrots, sweet red pepper and peas.

I am not really sure where the name Hummingbird cake comes from or why it is called that, but one thing is for sure, this cake is very good. This is an older recipe that has become very popular, and for good reason. This cake is very moist and uses a combination of pineapple, bananas and chopped pecans that go right into the cake batter. The cake is first baked and then topped with cream cheese frosting, which goes perfect with this cake. This is a triple layer cake for it will make a lot; just a small piece will be enough to fill you up. This cake got eaten very fast around here. If you are looking for a fantastic cake recipe to make for the Holidays, give this one a try. Enjoy.

Ingredients:

3 cups all purpose flour
1 teaspoon baking soda
1 teaspoon salt
2 cups sugar
1 teaspoon ground cinnamon
3 eggs (beaten)
1 cup vegetable oil
1 ½ teaspoons vanilla extract
1 (8 ounce) can crushed pineapple (with juice)
1 cup pecans (chopped)
2 cups bananas (chopped)
½ cup pecans (chopped)
Cream cheese Frosting-
1 (8 ounce) package cream cheese (softened)
½ cup butter or margarine (softened)
1 (16 ounce) package powdered sugar (sifted)
1 teaspoon vanilla

Cooking Instructions:

Step 1: Pre-heat the oven to 350 degrees. In a large mixing bowl combine flour, baking soda, salt, sugar and cinnamon. Add eggs and oil, stirring until the dry ingredients are moistened. Stir in vanilla, pineapple, 1 cup pecans and bananas. Pour batter into 3 9” round baking pans.

Step 2:
Bake at 350 degrees for 25-30 minutes or until a toothpick comes out clean. Remove from the oven and allow to cool in cake pans on a wire rack for 10 minutes. After 10 minutes remove from the cake pans and cool completely.
Step 3: To make cream cheese frosting- In a mixing bowl beat cream cheese and butter. A little at a time add powdered sugar until the mixture is smooth. Add vanilla extract. Frost cake with the frosting and top with ½ cup chopped pecans.

Not everyone celebrates Christmas the same. It varies per culture, family traditions, or country. How do you celebrate the winter? If you're not Christian, do you light a Menorrah in honor of Hannukah? You may also play games such as Dreidel to win some Gelt. African Americans honor their heritage with Kwanzaa and light a Kinara. Pagans light a Yule Log.

This challenge is all about showing us how you honor the holidays in your lunch. You may even include traditional foods.

So for example, my family is from Venezuela, so chances are I will be eating Pan de Jamon (ham bread) and Hallaca (a mixture stuffed with beef, pork, capers, raisins and olives wrapped in corn meal, bound in plaintain leaves and tied with string, and boiled afterwards.) If I actually lived there with my family, I would probably Rollerskate to Mass on Christmas morning after someone tugged on my shoelace which was tied onto my toe and hung out the window to wake me up by passerbys.

So, this was the last bento this year since I have holidays now, my mom cooking and won't be in need of bentos until the middle of January. =)

Today's nothing fancy, because I just needed a quick snack for lunch. So everything is rather finger food like.

Here's today's lunch, the last bento before I have some time off for Christmas! Leftovers from yesterday's lunch out... chicken enchiladas with mushroom cream sauce, rice with poblano peppers, guac pouring sauce, my homemade granola bars and a gingerman pick. Not the best pic using the office camera, but a spicy wake-me-up for mid day.

N and I have been chatting about dancing classes we were forced to take growing up, and he is keen on picking it up again.

When I said "The Tango as well???" I gotta say his comment cracked me up.

"What's not to like....it allows me to grope women!"

Here is the blog post as promised! :) Using my Ms. Bento from my brithday (in August!) for the first time. I know, how ashamed I am that I took so long to try it out!

(click for larger photo) Pork tofu, rice, chicken karaage, cucumber pickles, orange bell pepper. This Ms. Bento is A-M-A-Z-I-N-G. I own a Tiger thermal: post here, but I was pretty peeved when I found out that it wasn't leak proof. The Ms. Bento soup container IS leakproof and it held my soupy pork tofu perfectly. I heated it up in the morning with some boiling water for about 5 minutes and it kept my food hot until lunchtime. Definitely a great present. :) Till next time!

The top box is curry noodles with chicken and broccoli. (Leftover dinner from yesterday). The bottom is asparagus, cut veggies and little sandwiches with brie and pumpernickel. Also a tomato flower and some pear/ physalis for dessert.

Baked spaghetti is one of my favorite casserole dishes in the winter time. It can be a nice change from your classic spaghetti recipe. I would say this dish is very similar to that of lasagna, only without the lasagna noodles. This dish is preparing by first cooking the noodles, then cooking the burger with onions and adding the sauce. The noodles are then tossed with an egg and parmesan cheese mixture and layered into a casserole dish with the meat sauce and cottage cheese. You could add other ingredients to this recipe as well such as mushrooms, green pepper, pepperoni, ect. You can also use homemade spaghetti sauce, such as my spaghetti sauce recipe. If you decide to use my spaghetti sauce recipe, you can exclude the hamburger from this recipe. Enjoy.

Ingredients:
1 (16 ounce) package spaghetti noodles
1lb ground beef
1 medium onion (chopped)
1 (26 ounce) jar meatless spaghetti sauce
½ teaspoon seasoned salt
2 eggs
1/3 cup grated parmesan cheese
5 tablespoons butter (melted)
2 cups small curd cottage cheese
4 cups shredded mozzarella cheese


Cooking Instructions:

Step 1: Cook spaghetti noodles according to package directions. While noodles are cooking in a large skillet brown ground beef with the onion until the beef is no longer pink. Drain. Stir in spaghetti sauce and seasoning salt. Set aside.
Step 2: In a large bowl mix egg, parmesan cheese and butter. Drain spaghetti noodles and toss with the egg mixture until they are coated thoroughly.
Step 3:
Place half of the spaghetti noodles in a greased 13 x 9 inch baking dish. Top with half of the cottage cheese, half of the meat sauce, and half of the mozzarella cheese. Repeat layers, cover and bake at 350 degrees for 40 minutes. After 40 minutes uncover and top with the remaining mozzarella cheese. Return to the oven and bake for 20 minutes or until the cheese has melted.

I didn't post # 677 yesterday because.. frankly it's so utterly pathetic and ugly that the only reason I'm posting it at all is because I don't want a gap in my postings here... So to counterbalance that, I had to think of something at least CUTE for the newest one, # 678 - and I think I succeeded. Christmas elves play a lot bigger role in Danish yule lore than most other countries. In Denmark it's the elves (or nisser, they're somewhere between gnomes and elves, not REALLY being either one) that brings the christmas presents, sometimes helped by Santa, but they've sorta mixed here. So they're a common sight on christmas cards and of course in any sort of christmas decoration. And now on bentos, too :)

Ovenbaked pasta and veggies in cheese/cream sauce. Decorated with christmas elves made of baloney, salami, red and yellow sweet pepper and carrot. Trees of cucumber. Chicken katsu with tonkatsu sauce. Kiwi.

I don't usually do charaben, but I guess I have to have one winter-themed charaben this year! I've wanted to make an onigiri snowman pretty much ever since I started bentoing, but I didn't get around to it.
The snowman is accompanied by seasonally appropriate green asparagus and red glazed carrots (the red is food dye), and a bit of veggie burger with a Thai basil leaf.

I had pre christmas drinks with my dragonboat team mates yesterday....which is always fun.

I did make a comment that almost made our captain fall off his chair. Instead, he just slapped his forehead and mumbled...."Ness...you have rendered me speechless again!"

All I said was "You know? My new year resolution was to actually turn up for Saturday paddles more often...then what do you do??! You schedule the first paddle on my birthday. Now I got to find a new resolution! tsk!"

Come to think of it...it is kinda funny...hehehehehe.

Once again, reality put a money wrench in my plans. I'd planned the two quail eggs to be baubles on a christmas tree... but then one of them cracked duriing cooking so half of the stuff poured out into the water, leaving me with only half an egg.. And that half looked t me like the top of a candle.,.so after some experimentation where I had to reluctantly admit that the half that was left would NOT look like a bauble no matter how I put it.. I decided to give in and make it into yet another candle..

No bento yesterday 'cause I had a very important exam and my stomach doesn't want any lunch in such situations...

But, I got a new box and some accessories! Yay!

So, Bento #10 in the new box.



A bit more japanese this time with rice, furikake, chicken with teriyaki sauce and sesame in the one box.
Tamagoyaki, cucumber, carrot and a tomato flower and physalis and pear in the other box.

i have been re-watching Margaret Cho's standup comedy, and even though some of the political jokes are dated....it's still great.

I was watching her standup on the train to work today, and I just couldn't keep my laffs in....i caught myself laffing out loud a couple of times. I am sure people on the train must have thought I was a mental patient...but who cares!

Margaret Cho is fab and I have attached one of my favourites here.

For a few days I'd known I'd do a bento featuring some christmas elves. So I'd saved two sweet peppers for that purpose since it's perfect for their hats. And then... when I finally meant to do it tonight and opened the fridge.. only ONE pepper remained. So.. instead of the pair of elves I'd visualized and planned.. I had to make a change to this, rather pathetic lonely elf *L*

But hey.. it's at least tasty...
